Freixenet Cordón Rosado Cava, Spain

$12.95

Pick up a bottle or two of this vivacious sparkler to celebrate Valentine's Day on Sunday. Once you try it, you'll be craving it for the rest of winter, if only to dream of the strawberry season it evokes.

Tasting Note: Pale and lively in the glass, this delightful rosé is the colour of fresh strawberries. It smells like them too: berries and cherries and just a hint of biscuit from its time in the bottle. Silky, fresh and long on the palate, its lively fruit is balanced by fine acidity, resulting in a Cava of great elegance and style.

Enjoy With: Your sweetie, of course. You might also try it with a range of finger foods, grilled shellfish and spicy Asian dishes.

Style: Dry, medium-bodied, sparkling rosé.

Terroir / Region: Cava comes from northern Spain and is made in "the traditional method," that is, just like Champagne. In fact, it was once known as Champana, but the French put a stop to that. Production is based in the town of San Sadurni de Noya, where Freixenet is based. The region has been known for its wines since the time of the Romans. For this rosé, Freixenet blends 70% Trepat, the local mainstay of pink sparklers, with 30% Garnacha.

Producer: Freixenet is one of the original producers of Cava - and in many ways, the company's history and success parallels that of Cava in general. Their sparkling wine business was born at the beginning of the 20th century, and the company is named after an estate - La Freixenada - that has been in owner Pedro Ferrer's family since the 1200s. Still family-owned, Freixenet is now the largest exporter of Cava in the world.
